Tuesday’s Tool: A Cast Iron Griddle

I’ve not much experience in cooking for a crowd. There was only my sister and I growing up. Cooking for four is not the same as cooking for 7. And this crew seems to be eating more everyday! What’s up with that?

I love reading Katie’s blog because she can really cook for a crowd. After all, her family classifies as a crowd.

Recently, Katie blogged about omelets. I thought it was a great idea she had making them on her griddle so I gave it a try. Here are the results:

The omelets don’t look so fancy when being cooked. Yet, in the end, they come out thin and tender and fold up nicely in thirds.

My omelet had fresh tomatoes, red onions, basil and homemade cheese. I had to catch myself before I gobbled them up.

Cooking on the Griddle

I’ve had this Lodge Cast Iron Griddlefor nearly 12 years now. The Powermeister bought it as a birthday gift. It is great for cooking a number of foods for a crowd.

  6. Grilled Cheese (Yummy with Our New Favorite Cheese)

Cooking in Cast Iron

I do most of our cooking on cast iron and have acquired a number of pieces over the years. I particularly love Lodge Brand Cast Iron Cookware because it is made right here in our fair state of Tennessee! In fact, it is the only Cast Iron Cookware and therefore the only Cast Iron Griddlestill made anywhere in the U.S.A.

    We do most all cooking in cast iron and on a wood cook stove. Yes, we do have an electric range;however, food just tastes better on a wood cook stove. Plus I’ve forgotten how to use an electric stove – we are always burning food! LOL

    Yeah that Katie cooks up loads of food! My sweet hubby bought me a griddle and it wasn’t cast iron and it’s horrible! I need a nice cast iron griddle.

    Is it me or do the yolks of your eggs have a stronger/brighter yellow color than the ones I buy at the store? I can see it in the picture above and also of course in the eggs you gave us.

    Yes, Galen, our egg yolks are nearly orange in color. This is due to the grass the chickens eat and why we tolerate their roaming. There is a great deal of nutrition derived from grass, even by chickens. Even so called “free range” chickens do not produce eggs with orange yolks since they never see grass. Same thing with most Certified Organic eggs you buy at the grocery store.

    Thanks for commenting, Annette. I’m envious of your wood cooks stove. We cook on propane. It is much better than electric in my opinion. We’ve located a couple of nice wood cook stoves for sale in the area. They just aren’t in our budget at this time. Someday….

    I love my cast iron! I have a skillet and a small square griddle (perfect for pancakes or eggs for one or two) as well as a large griddle just like yours. I took it camping last summer and we made bacon, eggs and potatoes on it. Yum!
