Another Excuse to Eat Lard

O.k. not that we needed an excuse to eat lard. We eat all the lard we can get, even if our three little pigs were a bit smaller than we had hoped.

But lard, real lard from naturally raised pigs, is clearly gaining in popularity. And not just because it tastes good.

    Blondie asked me how they make bacon. She was wondering about the alternating fat and meat, but I thought she was asking how you turn side meat into bacon.

    “Cure it?” she asked? “Bacon comes from diseased meat? Yuck!”

    We’re coming up on our 10th anniversary, and she still is a city girl at heart….
